The Nordic Pantry: Amaranth Flour Pancakes

Naturally gluten-free, it contains all nine essential amino acids and lysine, a protein missing in most grains. Amaranth is a good source of iron, magnesium, and phosphorus. •Flavor: Earthy and peppery. •Texture effect: Tender in small amounts; dense in larger quantities. •Works best in: Pancakes and quick breads. •Gluten free.

Serve the Amaranth Flour Pancakes with Maple Grove Farm Pure Maple Syrup: a Grade A maple syrup renowned for its wonderful flavor, color and consistency and contains no high fructose corn syrup, sodium or cholesterol.  

Malt, rather than sugar, is what sweetens most food-service (i.e., restaurant and hotel) pancake mixes. For that typical "diner" taste, try malt in your pancakes instead of sugar.
